sweet and salty halloween bites

Ingredients:Mini Pretzels (these are made with snaps, shaped like squares, but you could use the twists too)Hershey Kisses Hugs (any kind of kisses would do, but the stripes are cool)Candy Corn
Directions:Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper or foil. Place pretzels on cookie sheet, not touching. Unwrap Hershey’s Kisses and place on top of pretzels and then place filled cookie sheet in oven. Bake for 3-5 minutes but no longer. You will know they are ready when the Hershey Kisses start to get shiny. Take out of oven and gently place candy corn on top of Hershey Kisses, pushing down ever so gently. Cool and then transfer to serving platter or wrap up as gifts.

quick chicken salad

  • 2 ( 12.5 oz) cans of chicken (or 3 cups diced cooked chicken)
  • 3/4 cup light mayonnaise
  • 1 cup red grapes, halved
  • 1 green onion, diced
  • 1 stalk celery, diced
  • 1/2 cup diced apple
  • salt and pepper to taste
  • pecans or cashews, optional
  1. In a bowl, combine the chicken, mayo, grapes, green onion, celery, apple, salt, and pepper.  Combine until well blended.
  2. Serve on rolls, bread, or croissants sprinkle with some cashews or pecans.  

ranch crock pot pork chops & parmesan potatoes

6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz can Cream of Chicken Soup
4 lbs peeled, cubed potatoes
5 Tablespoons real butter
1 cup fresh grated Parmesan cheese
6 cloves roasted garlic (directions are below)
1- 1 1/2 Cups warm skim milk (any milk will do, I used skim)
1 Tablespoon salt, or to taste
1 teaspoon fresh cracked black pepper, or to taste

Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.
Place potatoes into a large pot of cold water. Place onto stove top over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.
Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. I put a little parsley on top to serve.

Roasted Garlic

Preheat oven to 350 degrees F. Place bulb of garlic with skins on, wrap lightly in tin foil and bake for 1 hour. Remove from foil and let cool for 15 minutes. Remove garlic from skins, place in a bowl and mash with a fork until completely mashed. Set aside. One garlic bulb will have around 12 cloves.

*You may want to double the cream of chicken soup & ranch seasoning… if you like gravy a lot.

easy, super healthy smoothies

Get TONS of nutrition in your morning smoothie without having to keep a fridge full of fruits and veggies all the time. Contains: coconut water, mint, spinach, mango, celery, almonds, honey, orange, and ginger. 

  •  2 cups coconut water
  • 1/3 cup almonds
  • 2 cups spinach
  • 2 celery stalks, chopped
  • 1/4 cup fresh mint
  • 1/2 orange
  • 1 tablespoon honey
  • 1/2 teaspoon ginger powder
  • 2 cups frozen mango cubes

Place the ingredients in the order listed in a blender container and whirl until smooth. Divide mixture among 12 muffin cups and freeze until solid. When ready for a refreshing drink, place 1 cup coconut water or regular water in a blender followed by two of the green cups and whirl. If you don’t have a powerful blender, you might need to cut the frozen smoothie cups into quarters first.  

slow cooker bbq chicken

Ingredients

  • 4-6 pieces boneless skinless chicken breasts (use frozen, even easier!)
  • 1 bottle BBQ sauce 
  • 1/4 c vinegar
  • 1 tsp. red pepper flakes
  • 1/4 c brown sugar
  • 1/2 - 1 tsp. garlic powder

mix BBQ sauce with all ingredients listed under it. place chicken in crockpot. pour sauce over it and cook on LOW for 4-6 hours. you pretty much don’t even have to stir it… how easy is that?

slow cooker breakfast casserole

Ingredients

  • 1 pkg. (26 ounces) frozen shredding hash brown potatoes
  • 1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles
  • 1 cup (4 ounces) shredding mozzarella cheese
  • 1/2 cup (2 ounces) shredding parmesan cheese
  • 1/2 cup julienne cut sun dried tomatoes packed in oil, drained
  • 6 green onions, sliced
  • 12 eggs
  • 1/2 cups milk
  • 1 teaspoon salt
  • 1/4 ground black pepper  

Directions

1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoe on the bottom of slow cooker. 

2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.

3. Beat eggs, milk and pepper in large bowl with a wire whisk until well blended. 

4. Pour evenly over potato-sausage mixture.

5. Cook on low setting for 6-8 hours or on high setting for 3-4 hours or until eggs are set. 

chocolate-covered clementines with chili salt

Three ingredients: Dark chocolate, clementines and salt (sea salt is preferred, and use chili salt for a really amazing bold flavor)
